  2. my sons a chef - I’ve just been cooking meals for more years than I care to remember - enjoy cooking mind you and often have friends round :)

    that was a particularly messy day an I’m waiting for the oh to finish shelving the pantry ;p
     
  3. Try to keep those spices in the dark, sunlight will ruin them, airtight, cool and dark is best.
    Another little trick is buy whichever meat and marinade it before you freeze it, all ready to go when you need it.
    A spoonfull of ginger and garlic paste, salt and maybe some lemon juice, perfect.

  4. great tip! i know about hot vinegar being extremely good at cleaning having striped a few pots of their coatings while doing a honey and balsamic reduction! cheap arse tesco pots....
     
  5. I’m going to buy an aluminium pan at the weekend. I was talking to my curry making expert mate and he says you get better results as you need the curry to slightly “stick” to the pan and caramelise for a better taste. It won’t do this with a non stick pan :upyeah:

  7. I use cast iron pans most of the time, build up the coating, just rinse with no detergent.
    We always avoid aluminium, bad for dementia apparently, I can point to the in-laws as evidence.

  8. I will buy a selection of pans, however this weekend as stated I will buy an aluminium one as this is what I have seen used on some curries I have made. :)

    in future I’ll also but iron ones as required. :upyeah:

    I have no intention of having an argument about pans on the internet :laughing:

    Bought 2 sets today (My work curry mate asked for a set). :yum They come highly recommended.

  13. Yep (I used to live in Barnes, SW13 for 20+ years) so know it well. It's a bit far from @Robarano though and I don't know if they have an Indian quarter in the North East - too cold:)

    South Shields had a concentration of Indoan Restaurants. :upyeah:
