Does anybody have a video of how to sort this valve problem?

No video required. Just remove the cable, the butterfly defaults to the open position, and unplug/remove the servo motor and fit a Health ES-DO2 servo eliminator in it's place

This is the sort of thing that's lurking in your exhaust pipe (still working as intended on my 5000mls-old Hypermotard - in the open/off position). Just a simple rotating valve...
