Ive just emptied the car of all the crap I had in there, ready to transfer it all to my new car on Monday
Started the day at 05.30hrs peeling potatoes and getting them on to boil. We'd scoffed all the roasties yesterday, and there's no way I wasn't making Bubble & Squeak when we got back from the morning dog walk on the one day of the year when I can put left over Sprouts and Honey baked Parsnips in it with the other left-overs. No choice but to boil up some tatties before going out to work up a breakfast appetite.
Mother taught me to give them a good rattle around in the (Drained) saucepan about 50yrs ago, but I've only recently been adding a crumbled up veg stock cube over them after a first basting. Oh and for the love of God, NO to Goose fat, It flavours them too much to enjoy them for what they are.
Oh, and during a normal working week, if we fancy them of an evening I'm 90% of the way to getting a good match to them in the Air fryer: Boil them for a bit longer than you would for roasting in the Oven. Drain the water, and before giving them a good shake drizzle over a load of Veg oil, sea salt, and the crumbled up Veg Stock cube. 20mins in the Air fryer at 200deg with a shake every 5 mins and they are almost as good. Crispy on the outside but not as fluffy right in the middle as when done in the Oven.

We are just about to head out to another party..................another 3am job? Tomorrow I am going to vacuum the car out so I can hand it over on Monday morning. I might even take it to the car wash
Rode over to the boat to winterise it then had a potter about, shame they have salted the roads, what was lovely dry tarmac is now wet slimey shite. Still nice to be out though.
