Nuvi models are designed for general automotive use, not bikes, not as shock resistant or have IPX rated water resilience. They do work, though most, when I last looked, were just point to point rather than having the ability to load a GPX file as a route. As to mounting, this can be problematic as well. I think that the Ducati Performance sat nav was a Zumo 395, not a Nuvi. Low in the pecking order of biking Garmins at the time. A model number of your current unit would be useful (EDIT; noticed that's in the title). Along with a photo of the mount. And what prices, and for which units, are you considering extortionate? I did use a Nuvi765 many years ago, as a rare exception it was broadly similar operationally to the Garmin bike 660 unit that was twice the price at the time. Since have been using Garmin bike units and now a phone though an Android Auto panel. The bike specific units, Zomos are the more recent Garmin given name, are more expensive due to lower economy of scale for production and development. I would estimate that a majority of riders are now using smartphone based systems with an appropriate mounting system.
Having seen the model number in the title I've done a little research. Is this the Ducati branded, with red bezzle, version? This, I believe, is the same fit as the Zumo 220. They share a bike mount. There's a Zumo 220 on eBay for £140 here. I do note however that the bike mount, included when new, is missing from this. Guessing you still have this so pointing that out to the seller and offering a lower price may well work... There is a RAM cradle that fits it too. This is old tech, about 2011-12, so the chances of finding them, even more so the Nuvi 510 (cheaper), diminishes as they start to enter the just chuck it away phase for a lot of owners. I doubt if the whole of Europe will fit into the internal memory, if it even ever did, so this would need to go onto and SD card. I would see this as an opportunity to upgrade but understand you may have reasons not to.
this is the set-up i have on my P/P 1260, the position/height of the sat nav is perfect. i was hoping that garmin made another version with the same dimensions. i do not want to spend £140 on something that i would not use often. View attachment 339201
I guess that the only solution then is that you'll need to find (wait for) another Nuvi 510. You can set up an eBay watch item that'll email you when and item with 'Nuvi 510' in the title gets listed. Either that or, as I suggested, contact the vendor of the one I linked to and point out that there's no bike mount and offer what you're willing to pay. Worth a try at least. If they've been sitting on it for a while they maybe keen to get shot of it, they're a breakers by the looks of it.

Do you have a smartphone? Might be the cheapest way to a solution so long as you can make the mount work. You'd need to measure the holes in your mount (the plate behind the current Nuvi cradle). The usual mount for M/C Garmins is usually the AMPS hole pattern. The orientation is usually landscape with the longest side horizontal, turned 90º from that shown in the link. The one exception is the Zumo 395 with is orientated as shown. If the spacing of your holes is 38mm horizontally then most Garmin cradles will fit your mount. Depending on your navigation needs it could be as simple as using a smartphone and Google Maps. There are many mounting solutions for phones out there. Best not to skimp on these though as having your phone break free whilst on the move would be costly at best. Quadlock and SP Connect systems spring to mind. As it so happens I'm selling some SP Connect kit at the moment that may suit your purpose. It's quality kit being sold at around half price but given what you've said above this still maybe too expensive for what you have in mind.
