Can anyone point me in the direction of a set of M8 screws to plug the threads left when removing the mirrors. The right hand one is a left hand thread and this is where I'm finding the difficulty. Any help appreciated.
You can get varying levels of replacement clamp instead of plugging. Its a far tidier solution. https://www.telgesparts.de/brembo-clamp-black-for-brembo-master-cylinders-p-1799.html?language=en https://www.cncracing.com/en/product/brembo-master-cylinder-clamp-no-mirror-mount.html
They are already attached to the master cylinder side. This is just the half circle clamp at the back of the bar.

Should the vendor not have a right hand thread to send you as well as a LHT, find another before you commit to buying. Many sell these.

Bought a set off ebay from China, only £4.50. Left hand thread all ok,right hand no go. Ended up getting a pair off CNC Racing. All good now.
