If you have the later fork lowers with 100mm centres the standard calipers available are the 1x98 Brembo M4 which will work fine with your stock...
I can tell you that the GoPro is very well supported by third-party software and app developers, I didn't consider this when I bought my camera...

Yeah they had a much flatter radius at the centre of the tyre compared to the Rosso III - which look more like the Corsa now than the older Rossos

You might be right about the compound but honestly I don't know what it is, they feel slimy and greasy in the wet and let go all too easily...
That's probably a much better tyre than the Rosso III for the road in wet conditions imo
Just treat them the same as the other tyres you mentioned to begin with, if you find any more wet grip with the Rosso IIIs then good luck to you...
